Noma LA Now Serving Rancho Tissue
Noma LA spend time getting to know ingredients, producers, and traditions, and let that guide what they server on the plate. Their cooking is shaped by what exists here — the Pacific, the mountains, the desert, and the long distances between them. Rancho Tissue were honored to be selected by Noma to ship 1,000 or more liners every week during their months-long pop-up restaurant in Los Angeles. Shipments alternated weekly between Agave weberi and Agave ovatifolia. All plants were prepared by the kitchen chefs and served with their California-grown cuisine.
